韭菜饼 Leek Pancake

As Chinese, we love to eat stuff with leek.  Pork with leek makes perfect dumpling fillings.  We use leek to make the pancake filling as well.  So today, the food I am introducing to you is Leek Pancake.

1. the filling
8 pieces of shrimp; 50g of leek, and 1 package of egg tofu (50 gram)
Add appropriate oil & salt as you like.

2. the pastry
Cut a small portion of the dough, spread some flour on the table and roll the pastry out very thin.

3. the pancake
Spread the filling onto one piece of pastry, and cover the filling with another piece of pastry.
Press the edge of the pastry to ensure that the pastry with stick together, so that the filling will not come out.

4. Pan fry
Heat up the pan, spread a little oil (about the size of a 50 cents coin).
Put the pancake evenly onto the pan, heat for a little while until the pastry turns firm. 
Turn over the pancake, and heat up the other side until it turns firm.
The pancake is ready parts of its color turns gold evenly.

Cut the pancake into 4 pieces.
Serve and enjoy.

Welcome to my kitchen

In the end, I have decided to create this blog, to post some recipes of Chinese food.  Why am I doing this?

1st, I made dumplings on last Thursday night and brought them to my colleagues for breakfast.  All of them liked the dumplings, and said that I should open a shop and sell dumplings.  Well, sometimes, the compliments are not so true; maybe they are just being polite.  I thought it this way.

Until the second day, a colleague messaged me asking for the recipe, because she wanted to make dumplings for her mum on Mother's Day.  That was the time I felt that maybe they really liked the dumplings.

So here I am, posting some of my recipes to make some North Chinese food.  Stay tuned!
